Howling Wolves: Sparkling White Shiraz - 2007
This exotic 'blushed' sparkling wine is produced by taking the free run juice from premium 'red' Shiraz grapes before crushing and pumping it directly to the tank.
The juice has not been 'pressed' and has had virtually no contact at all with the skins. It was then allowed to cold-settle for 24 hours before being yeast innoculated and fermented cool to allow for maximum aroma development. When fermentation was completed, the wine was shipped to the Barossa Valley in South Australia to undertake sophisticated carbonation development, final finishing and bottling. This created the gorgeous effervescing mousse and 'fairy floss' mouth feel.
